Handpicked fruit from the Ferraro vineyard in Myrtleford was whole bunch pressed before settling overnight to be racked into stainless steel. Retaining some grape solids the juice was fermented naturally and allowed to mature on its gross lees for three months before being cleanly racked and filtered for bottling.
